The outside skirt steak is from the plate section of the cow, between the brisket and flank and below the rib section (technically the diaphragm). The outside skirt steak is slightly larger than the standard inside skirt steak and is often extremely difficult to find in local stores. These flavorful cuts are perfect for fajitas, stir-fry, or salads.
